Finally pulling the trigger on a kitchen redo, couple of questions

My wife and I have been going back and forth on this for like three years now and we finally decided 2026 is the year we gut the kitchen. The cabinets are original from when the house was built and the layout just doesn't work for how we actually cook, so it's time. I've been doing the usual rabbit hole of research and someone in a local Facebook group pointed me to kitchenbathpaloalto.com when I asked about designers who actually listen instead of just pushing whatever's trendy. What I'm trying to figure out now is how early people usually start talking to a designer before demo day, because I don't want to be that person who calls a month out and expects magic. Also curious if anyone here went with a design build setup versus hiring separately, and whether the headache was worth it either way. I'm not looking for the cheapest option, I just want someone who shows up when they say they will and doesn't vanish halfway through.
